Tamal Patra — Indian Bay Leaves (Tej Patta) | 100 g & 2 lb
Tamal Patra (tej patta / Indian bay leaves) are aromatic whole dried leaves from the Cinnamomum tamala tree. Distinct from Mediterranean bay leaves, they have a warm, clove-like aroma with hints of cinnamon and cassia — a deeper, spicier fragrance that is characteristic of South Asian cooking. Used whole as a background spice, they add warmth and complexity to biryanis, curries, and slow-cooked dishes. Available in retail and bulk sizes.
Culinary Uses:
- Biryani and pulao — a key whole spice added to the base with other whole spices
- Curries and gravies — for background warmth and aroma
- Garam masala and whole spice blends
- Dal tadka and lentil dishes
- Slow-cooked meat and vegetable dishes — nihari, korma, and rogan josh
- Rice dishes and pilafs
- Spiced broths and stocks
Indian vs. Mediterranean Bay Leaves: Indian bay leaves (tej patta) come from the Cinnamomum tamala tree and have a warm, clove-cinnamon aroma. Mediterranean bay leaves (Laurus nobilis) have a more herbal, eucalyptus-like scent. They are not interchangeable — tej patta is the correct leaf for South Asian recipes.
How to Use: Add whole to hot oil or liquid at the start of cooking. Remove before serving as the whole leaf is not eaten.
