Dry amla is whole Indian gooseberry that has been sun-dried — intensely tart, tangy, and slightly astringent with a concentrated flavour. A traditional ingredient in Indian cooking, pickling, and herbal preparations. Available in retail and bulk sizes.

- Amla pickle and achaar
- Amla chutney and murabba (sweet preserve)
- Amla tea — steep in hot water with honey and ginger
- Ground into amla powder for use as a souring agent
- Added to herbal kadha (decoction) and traditional drinks
- Chyawanprash and Ayurvedic preparations
Flavour Profile: Intensely sour, tangy, and astringent with a slightly bitter finish. Flavour mellows when cooked or soaked. Much more concentrated than fresh amla.
