Desi Chana (kala chana / whole desi chickpeas) are small, dark brown chickpeas with a firm texture and rich, earthy flavour. Smaller and darker than the larger kabuli (white) chickpeas, desi chana have a thicker skin and a more robust, nutty taste that holds up well in long-cooked curries and spiced dishes. A staple in North and South Indian cooking and a favourite in street food and home kitchens alike. Available in retail and bulk sizes.

Desi Chana vs. Kabuli Chana: Desi chana are smaller, darker, and have a thicker skin than kabuli (white) chickpeas. They have a stronger, earthier flavour and take longer to cook. Kabuli chana are used for chole and hummus; desi chana are preferred for kala chana curry, chaat, and sundal.
How to Cook: Soak overnight (8–12 hours) in plenty of water before cooking. Drain, rinse, and pressure cook for 20–25 minutes or simmer on the stovetop for 60–90 minutes until tender.
