Baker's Ammonia (Ammonium Carbonate) is a traditional leavening ingredient called for in many old-fashioned recipes, also known as "hartshorn." It produces extra-crisp cookies and crackers without leaving an alkaline off-flavour in baked goods. Not recommended for cakes or large-volume items, as the ammonia gas may not evaporate entirely.

Usage Notes

  • You will notice an ammonia odour while baking — this quickly dissipates and the finished product will have no ammonia odour or taste
  • Store in a tightly sealed jar to prevent evaporation — it will not spoil but will diminish if exposed to air
